In pot heat up canoliva oil, add garlic and onions to sweat them (do not let them get color). Then add the carrots and the celery and cook 3-4 min. Add cabbage, zucchini, peas and cook another 3-4 min. Add canned tomatoes and fresh tomatoes and braise for 4 min. Add water, potatoes, salt, pepper and simmer for 15 min.
Take 1 qt of soup out and blend it with immersion blender. Add it to the boiling soup. Add basil and spinach julienned, mixed herbs and parsley and simmer for 3 min.
