Pizza Ortolana

1 PIZZA

Basic pizza dough (can be used for all pizzas)

INGREDIENTS FOR PIZZA ORTOLANA TOPPING:

  • 5 tablespoons tomato purée
  • 2 oz fresh cubed mozzarella
  • 2 oz grilled eggplant
  • 2 oz roasted yellow and red peppers (roasted, peeled, seeded and ½ inch. julienne)
  • 0.5 oz grilled zucchini
  • ½ tablespoon of extra virgin olive oil

DIRECTIONS:

Roll out the pizza with your hands, or with the help of a rolling pin, until the dough is thin. If you are using a baking pan to bake the pizza, you need to grease it with a little oil before adding the dough. Cover the pizza with the tomato sauce, mozzarella and then evenly arrange the other ingredients. Bake at 500º F for 7-10 minutes until the crust becomes golden brown. Once pulled out of the oven, drizzle with extra virgin olive oil.
