Panzanella

SERVES 4 PEOPLE

INGREDIENTS:

  • 16 oz sliced tomatoes
  • 2 oz celery cut into thin diagonal slices
  • 1 oz red onion
  • 9 oz sliced cucumbers
  • 1.5 oz Kalamata olives
  • 4 oz romaine lettuce
  • 4 oz croutons
  • 4 oz balsamic vinegar dressing
  • 2 oz crumbled goat cheese
  • 6 basil leaves
  • extra virgin olive oil

DIRECTIONS:

In a bowl, mix all the ingredients except the cheese. Add the balsamic vinegar dressing, garnish with the crumbled cheese and serve.
