SERVES 4 PEOPLE

INGREDIENTS:

  • 8 oz mesclun salad
  • 4 oz cherry tomatoes
  • 8 oz jarred cannellini beans
  • 8 oz jarred borlotti
  • 6 oz garbanzo
  • 2 oz artichokes in olive oil
  • ½ oz red onion
  • 4 oz lemon dressing (whisk together the extra virgin olive oil, lemon juice, salt and pepper)

DIRECTIONS:

Mix all ingredients in a bowl. Add the lemon dressing, garnish with a cured artichoke cut into 4 wedges and serve.
